Rice Bran.

Rice has been a symbol of good luck since ancient times, perhaps because it’s a source of nutrition for most of the world’s people. In the 19th century, millers in the Far East discovered they could achieve a gleaming white color by polishing the grain. Unfortunately, this also stripped away the bran- its most nutritious part. White rice is mostly starch, aside from added vitamins. Rice bran, the thin brown coating between the rice kernel and its protective hull, is one of nature’s oldest and richest sources of fiber, essential fatty acids, minerals, vitamins, and essential amino acids.

Complex carbohydrates from whole grains digest slowly in the body, stabilizing blood sugar and providing the energy your body needs. By eating 50 to 60% of daily calories in complex carbohydrates- consumption of essential vitamins, minerals, and fiber increases, and fat intake decreases. Brown rice contains high amounts of soluble fiber— the type of fiber believed to protect against heart disease and certain cancers. Asthma & Additives.

Asthma is a chronic lung condition characterized by difficulty in breathing. It’s triggered when an inflammation of the airways reduces the amount of air that can pass by. An asthma “attack” can be caused by an allergic reaction to certain foods and food additives. Sulphites are a food additive commonly used as a preservative in dried fruits, processed meats and even fruit juice drinks. Sulphites have been voted the additive “most like to cause problems,” but only individuals who are ultra sensitive and react within fifteen minutes, make the association. Repeated exposure to sulphites can have a cumulative effect. Other food additives associated with asthma include artificial colors, benzoates, and nitrates, BHA, BHT and MSG.

Children under the age of five are especially vulnerable to food additives, as they breathe twice as much air, eat three to four times more food, and drink two to seven times more water per pound of body weight than adults. Read labels carefully and always consult your doctor about changes in diet or medication. Choose Red.

Red fruits and vegetables, in addition to pleasing the eye and palate, are loaded with health preserving compounds.  Phenolic compounds and carotinoids, which give color to most fruits and vegetables, have been shown to prevent or reduce the development of certain cancers and cardiovascular diseases. The phytochemicals in red fruits and vegetables protect brain cells, aid in the prevention of heart disease, help reduce cholesterol, support the urinary tract, and lower the risk of breast and skin cancers. Lycopene, found in tomatoes, pink grapefruit and watermelon, is a strong antioxidant that protects against many cancers. Red apples, beets, radishes and cherries contain anthocyanins that reduce inflammation and guard against heart disease, hypertension and arteriosclerosis. The polyphenols in cranberries reduce cholesterol and protect the heart.  Raspberries and strawberries contain another cancer fighting phytochemical called ellagic acid.

Short on K.

If you're between the ages of 18 and 44, there's a good chance you don’t get enough Vitamin K. Most people know about the importance of calcium for healthy bones. Less known is the fact that Vitamin K is the “glue” that plugs calcium into the bone matrix. Vitamin K is now considered equivalent to Fosamax-type osteoporosis drugs. Adequate consumption of Vitamin K, an important activator of three proteins essential to bone health, may decrease the risk of hip fractures among women of any age.

Vitamin K1, or phylloquinone, is found in nature. Once thought to be plentiful in the American diet, there’s now evidence that people age 13 and over get half the recommended daily dosage. Although Vitamin K is a fat-soluble vitamin, the body stores very little of it and its reserve is rapidly depleted without regular intake. CLA, or Conjugated Linoleic Acid, is an important fatty acid found mainly in the milk of cows, sheep and goats. Pasture-fed animals ingest Linoleic Acid, which is converted to CLA by the bacteria in their stomachs. Studies show that a diet rich in CLA and containing a balanced ratio of Omega 6s and Omega 3s can dramatically lower the risk of breast cancer, heart disease, autoimmune disorders, obesity, and diabetes. Dairy products from pastured cows can have five times more CLA than grain fed animals. Approximately 90 percent of US cows are confined and eat no grass. An abnormal diet of grain and processed feeds, and the use of growth hormones to increase milk production diminish the nutritional value. Certified organic milk is produced on farms where cows are fed 100 percent organic feed, forage and hay. The cows change pastures twice daily; which fertilizes the land and better controls parasites. Good Eggs.

The old adage “You are what you eat,” is as true for chickens as for people.  Hens that are fed a special diet lay eggs that are richer in Omega- 3 fatty acids- a family of polyunsaturated fatty acids that promotes brain and vision development and protects against disease in humans. Egg-transmitted Salmonella is still an “important public health problem.” Pregnant women, children and the elderly are especially prone to serious illness from hen-house pathogens. Factory farms can be a breeding ground for antibiotic resistant disease. Hen houses can contain up to 15 million hens, often in very crowded conditions. The resultant stress lowers the hens’ immunity necessitating widespread antibiotic use.
